Parma is the Italian capital of prosciutto. The facilities in which it is produced are concentrated in a limited area where the sea breezes from the Tyrrhenian Sea, wafting across the Versilia area and through the Apennine Mountains, reach the Parma area where their beneficial gusts aid the curing process.
Parmigiano-Reggiano cheese that makes Parma the capital of DOP (Protected Designation of Origin) products and full-bodied, robust flavors and Parmesan cuisine the queen of the table. Today, as in the past, the skill of cheese-makers is unique and is the key to creating this cheese, together with the long, natural aging process that gives it its aroma, fragrance and flavor.
The jewel in the crown is a product of superlative quality—culatello, a prime cut of prosciutto—that highlights the skill of the master butchers who sculpt the cuts of meat to create an equilibrium between lean and fat. Words alone cannot describe the soft, mellow impact accompanied by the penetrating aroma that is released when this cured meat is sliced.
The local wines that are served are produced and bottled following local wine-making techniques and traditions.
